The keyboard is a pretty decent controller (it can have up to 8 zones, each with its own MIDI channel), but the obvious drawback is the lack of knobs and faders, so it's not much use for editing other synths. You could always sell it if it doesn't work out, and the and iPad app will still be here. In conclusion, you seem set on the keyboard so perhaps you shoud get the hardware. A used iPad Air 2 and the iWavestation app will cost you about the same as a Wavestation. So fun to program that I get lost in making sounds with all the available expansion cards.
It feels like using a Wavestation's touchscreen if the original had had one. Like the Commodore, I don't get along with computers when making music, but the iPad has been a completely different story, especially when using a standalone synth like iWavestation. And if you do program your own sounds, the VST will be much quicker to use and easier to grasp. Especially if you don't plan to program your own sounds. Having all the expansion cards will make a huge difference in wheter or not you sound dated. It may not do as much as you'd like for a controller, though from what I read, it looks like it transmits quite a bit, including channel after-touch. You may want to check its MIDI implementation chart if you're thinking of using it as a controller. Of course, if you're looking to get the EX/EXK-WS version, you'll have more waveforms and effects to play with, if you can find one for sale. If that works with your style of music, or if you plan to buy the (now relatively expensive and rare) expansion cards, then you'll probably have fun with it. Without a wide palette of sounds, what you'll have may sound fairly dated.
